I am trying to use the QGIS Tutorial that was on the QGIS.org site and I am having issues following along with Chapters 6 & 7 because the instructions do not follow the screens in QGIS. I am using V3.4 which I read is what the tutorial was written for but the screen shots in the tutorial do not appear to match the screen in QGIS.

Does any body have a suggestion for which version of QGIS to use for these chapter in the tutorial? Or have a recommendation for a different tutorial to use?
More specifically. In Chapter 6. Part 6.3.3 Follow Along: Setting Form Field Types - The work flow and screen shots do not match what is seen in QGIS 3.4.
There is not a "Fields" option in the properties menu in QGIS 3.4. There is a "Source Field" but it doesn't look the same as what is shown in the tutorial and the "Line Edit" is not available. It appears that the work flow has changed but the directions in the tutorial have not been updated. Are there any corrected instructions available?
In 6.3.6 Follow Along: Creating a New Form The instructions are vague and do not match up with the actual work flow in QT Designer
In Chapter 6.3.7. Follow Along: Associating the Form with Your Layer The workflow in described in the tutorial does not match the possible workflow in the actual QGIS 3.4 since the screen do not match up. Where do you chose "Provide ui-file" in the "Field" option in the properties menu?
7.1.2. basic Follow Along: “On the Fly” Reprojection I can not locate the CRS NSIDC EASE-Grid 2.0 Global that is used in the tutorial and it appears the the workflow and screen are different than what is used in the tutorial.
